You are going love these gluten-free almond-flaxseed muffins. It incorporates almond flour and unsweetened apple sauce which makes it super moist. Flaxseed is a good source of dietary fiber, protein and iron. Also, the combination of flax seed and almond provides the omega-3 fatty acids (ALA) making this especially healthy too.
Ingredients (Makes 12)
1 cup flaxseed meal
1 cup almond flour or almond meal
1 teaspoon baking soda
1 teaspoon gluten-free baking powder
1/4 teaspoon sea salt
1 teaspoon ground cinnamon
1/2 cup maple syrup, agave syrup or any sugar substitute
1/4 cup organic unsweetened applesauce
1/4 cup melted organic butter or ghee
4 organic eggs, beaten
1/2 cup almond milk
Preparation
Preheat the oven to 350˚F. Combine the dry ingredients in a medium bowl. Whisk together the wet in another medium bowl. Pour the wet into the dry, using a spatula to combine. Distribute into 12 muffin cups. Bake for 20 minutes until a toothpick inserted in the center comes out clean.
Note: After muffins are cooled, store leftovers in the refrigerator. You can also freeze any leftovers for up to two weeks. Thaw at room temperature when ready to eat.
