Cranberry-Walnut Biscotti


Bake a batch of Biscotti and share it with your family, friends and neighbors this holiday season. These rich biscotti have cranberries that are high in dietary fiber and walnuts that are rich in omega-3 fatty acids. Both provide lots of health benefits. This recipe is gluten free and dairy free.


Servings: 12 biscotti


Ingredients

  • 1 cup rice flour (brown or white)

  • 1/4 cup honey or agave

  • ½ cup dried cranberries

  • 1/4 cup chopped walnuts

  • 1 egg

  • 1 teaspoon of vanilla extract (optional)

  • 1 teaspoon baking soda

  • 3 tablespoons of butter or ghee

  • 1 tablespoon of your favorite protein powder

Directions

  1. Preheat your oven to 350º F.

  2. Whisk together the egg with the vanilla and honey until well combined.

  3. Mix the egg mixture with the flour, baking soda, ghee and cranberries. If dough is too loose, add a tablespoon of flour at a time.

  4. On a floured surface, shape the dough into a log.

  5. Place on parchment paper on baking sheet and bake or 18-20 minutes.

  6. Remove log from oven and cool for a few minutes. Reduce oven temperature to 300ºF.

  7. With a serrated knife, cut log in 1/2-3/4 inch slices

  8. Place the slices in the baking sheet and bake for 10 more minutes or until golden brown.
