Summer time is here and we are celebrating pride month by encouraging you to fill your plates with a variety of colorful organic fresh fruits and vegetables. All these vibrant colors shows solidarity and support of the LGBTQ+ community. Besides from that, these fruits and vegetables provides numerous health benefits which can lower your risk of some cancers, while also boosting your heart and brain health.

Rainbow Roasted Vegetables with Oregano and Olive Oil

Here is a healthy roasted veggie recipe to make with pride. These roasted veggies make a great addition to any meal. Ingredients 1 large purple beets, ready to eat or fresh 2 large carrots 1 small butternut squash 1 red bell pepper 6-8 medium size brussels sprouts 1/2 tsp oregano 2 tbsp olive oil Sea salt to taste Instructions Preheat oven to 350 F. Cut vegetables into small chunks of equal size (helps to roast evenly). Cover baking pan with aluminum foil and brush with olive oil. Place the veggies piece by piece to shape a rainbow. Brush olive oil over the veggies and sprinkle lightly with sea salt and oregano. Place in oven and bake for 30-35 minutes.
