Gluten-Free Pumpkin-Spice-Chocolate Chip Cookies

Satisfy your sweet tooth with this healthy pumpkin-spice-chocolate chip cookies. It’s perfect for holiday entertaining.

Pumpkin is rich in vitamins A, C, and E, fiber. It also has powerful antioxidants that boost immunity and promote eye and skin health.

Tip: You can make your own puree or purchase canned pumpkin puree without added sugar.


  • 1 1/2 cups gluten-free all-purpose flour blend

  • 1/2 cup almond meal

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 tablespoon pumpkin spice

  • 1/2 cup organic vegetable shortening

  • 1/4 agave or maple syrup

  • 1 egg

  • 1/2 teaspoon vanilla

  • 1/2 cup chocolate chips (optional)

  • 1/2 cup chopped walnuts or pecans (optional)


  1. Preheat oven to 350 and line baking sheet with parchment paper

  2. Combine all dry ingredients in a medium size bowl

  3. In a separate bowl, whisk together the remaining ingredients

  4. Combine dry and wet ingredients. Fold in chocolate chips and nuts

  5. Scoop one tablespoon batter onto parchment paper

  6. Bake 15-20 minutes, or until slightly firm

  7. Store in a covered container in the refrigerator for 4 days
