Gluten-Free Pumpkin-Spice-Chocolate Chip Cookies

Tip: You can make your own puree or purchase canned pumpkin puree without added sugar.
Ingredients:
1 1/2 cups gluten-free all-purpose flour blend
1/2 cup almond meal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon pumpkin spice
1/2 cup organic vegetable shortening
1/4 agave or maple syrup
1 egg
1/2 teaspoon vanilla
1/2 cup chocolate chips (optional)
1/2 cup chopped walnuts or pecans (optional)
Instructions:
Preheat oven to 350 and line baking sheet with parchment paper
Combine all dry ingredients in a medium size bowl
In a separate bowl, whisk together the remaining ingredients
Combine dry and wet ingredients. Fold in chocolate chips and nuts
Scoop one tablespoon batter onto parchment paper
Bake 15-20 minutes, or until slightly firm
Store in a covered container in the refrigerator for 4 days
